Thank your lucky stars that the Aitkins diet thing is over. But seriously, think about getting your ';test'; product out on any events that draw hundreds of people at once before investing into equipment, leases and loans. These events can include winter farmers markets, auctions, friends wedding or a simple add on craigslist. Get a sense to see what the climate is like in your area from this ';test'; run.
If this works, then start to do your due diligence by seeing who is making cakes in the area and how they market. Be original and find a niche' of an untapped need and your cake business will grow faster.
